The conference also offered information about food colors and their effects. Red foods like tomatoes, apples, strawberries, water melons and pomegranates are effective in reducing the number of cancer cells. And beta carotene in yellow foods like citrons, aged ambers, pineapples, and mangos converts to vitamin A in the body, and improves night vision and anti-aging processes. Green foods like broccoli, cabbage, cucumbers, celery, plums, and especially spinach, contain the highest levels of lutein. Lutein lowers the risk of cataracts and macular degeneration. And anthocyanin in purple foods like eggplants, blueberries, and grapes are effective in improving melancholia and lowering cholesterol.
The conference ended successfully and provided valuable health information for CWNU students. This conference by the Department of Food and Nutrition will be held annually.
